Ingredients

1 lb unpeeled large shrimp
4 teaspoons olive oil , divided
1/2 cup dry white wine
2 cups water
8 ounces bottled clam juice
1 bay leaf
3 cups chopped onions
1 tablespoon tomato paste
6 garlic cloves , minced
1 tablespoon chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes ( more if you choose ) or 1/4 teaspoon crushed red pepper flakes ( more if you choose )
1 can diced tomatoes , undrained
4 cups cooked cannellini beans
1/4 cup chopped fresh flat-leaf parsley
This Cannellini Bean and Shrimp Stew is a hearty and filling meal that is perfect for cold winter days. The stew has a rich and savory taste that is achieved by combining cannellini beans, onions, garlic, diced tomatoes, and bay leaves. The dish is then elevated to another level by adding unpeeled large shrimp, which provide a delicious and succulent texture. Instructions

1.Peel the shrimp and set the shells aside. In a large pot heat 2 teaspoons of the olive oil over medium-high heat.
2.Add the shrimp shells and sauté, stirring occasionally, until pink and lightly browned, about 5 minutes.
3.Add the wine and boil until it is reduced to about 1/3 of a cup, scraping up brown bits stuck to the bottom of the pot.
4.Add the water, clam juice, and bay leaf and bring to a simmer.
5.Simmer uncovered for about 20 minutes.
6.Remove the pot from heat and strain the broth through a fine-mesh sieve into a separate bowl. Discard the solids and set the broth aside.
7.Wipe out the pot, return it to medium-high heat, and add the remaining 2 teaspoons of olive oil.
8.Add the onions, tomato paste, garlic, thyme, salt, and red pepper flakes and sauté until the onions are translucent and very soft, stirring occasionally, for about 15 minutes.
9.Add the diced tomatoes with their juice and simmer for about 5 minutes.
10.Add the reserved broth and cannellini beans and simmer for about 10 minutes.
11.Add the shrimp and parsley and cook until the shrimp are pink and cooked through, about 3 minutes. Serve hot.
