Ingredients

1 lb dried cannellini beans
6 cups water
2 hot Italian sausages , sliced
1 large onion , chopped
1 large garlic clove , minced
2 large tomatoes ( peel and chop )
1 bay leaf , crumbled
1/2 teaspoon thyme , crumbled
1/2 teaspoon basil , crumbled
3 slices orange rind
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon instant beef bouillon

Instructions

1.In a large pot, soak the cannellini beans in water overnight.
2.Drain the water and add 6 cups of fresh water to the pot.
3.Boil the beans over medium heat for 30 minutes or until tender.
4.Drain and rinse the cooked beans in cold water.
5.In a skillet, cook the sliced sausages over medium heat until browned. Then, transfer them to a plate.
6.In the same skillet, saute the chopped onion until caramelized. Add the minced garlic to the skillet and saute for 1 minute.
7.Add the chopped tomatoes, crumbled bay leaf, crumbled thyme, crumbled basil, and orange rind. Stir well and cook for 10 minutes.
8.Add the cooked cannellini beans, sliced sausage, salt, pepper, and instant beef bouillon to the skillet. Stir well and let simmer for 5 minutes or until heated through.
9.Serve the Cannellini Alla Catania hot and garnish with fresh parsley.
