Ingredients

4 tablespoons vegetable oil
1 pinch asafoetida powder
1 teaspoon mustard seeds
14 curry leaves
1 small onion , peeled and chopped
3 g fresh ginger , peeled and finely chopped
5 garlic cloves , peeled and chopped
1 1/4 teaspoons turmeric
1/2 teaspoon chili powder
1 teaspoon ground coriander
150 ml coconut milk
2 cans cannellini beans , drained and rinsed
10 cherry tomatoes , halved if large
1 teaspoon sugar
1/4 teaspoon tamarind paste
handful of grated coconut , to garnish
handful fresh coriander , chopped

Instructions

1.In a pan, heat the oil over medium heat. Add asafoetida, mustard seeds and curry leaves.
2.Once the mustard seeds start spluttering, add chopped onion and saute till it turns translucent.
3.Add ginger, garlic and stir well. Continue to fry for about 30 seconds. Add turmeric, chilli powder and ground coriander, mix well.
4.Pour in coconut milk, stir all ingredients together. Add cannellini beans and cherry tomatoes. Mix well to coat the beans and tomatoes.
5.Cook for approximately 5 minutes or until the tomatoes are soft.
6.Add sugar and tamarind paste. Mix and stir gently. Sprinkle grated coconut and chopped coriander on top to garnish. Serve with naan bread or basmati rice.
