Ingredients

5 lbs tomatoes ( red and green tomatoes seeded and chopped = 5 pounds )
1 lb chile ( I used 2 jalapenos , 2 bell peppers , 1 habanero , 1 Tabasco , and 1 chipotle that I made )
1 lb sweet onion , diced
1 cup vinegar
1 lime , juice and zest of
1 tablespoon cumin powder
3 tablespoons dried parsley
1 tablespoon salt
1/2 teaspoon black pepper
4 garlic cloves , minced
6 ounces tomato paste
1/4 cup fresh cilantro ( Also additional fresh cilantro can be added at time of serving )

Instructions

1.Place the chopped tomatoes, chilies, sweet onion, vinegar, lime juice and zest, cumin powder, dried parsley, salt, black pepper, minced garlic, and tomato paste into a large pot.
2.Mix together thoroughly and bring to a boil on medium-high heat.
3.Once boiled, lower the heat and let simmer for 30 minutes.
4.Remove from the heat and stir in fresh cilantro.
5.Fill your clean jars with the salsa mixture.
6.Seal the jars and place them into a hot water bath.
7.Boil the jars for about 10 minutes.
8.Finally, remove the jars and allow them to cool before storing.
