Ingredients

1/2 whole chicken , cut up
2 medium onions , chopped
3 chicken bouillon cubes
1 cup short-grain white rice
vegetable oil ( for frying )
3 cups water
Canja is a traditional chicken and rice soup from the Cape Verde Islands, a collection of ten volcanic islands off the coast of West Africa. Instructions

1.Season the chicken pieces with salt and pepper, sprinkle with the vinegar and set aside.
2.In a large pot over medium heat, fry the onions until golden brown. Add the chicken pieces and fry until browned on all sides.
3.Add the bouillon cubes and enough water to cover the chicken by about 1 inch. Bring the mixture to a boil, reduce the heat to low, and simmer for 20-30 minutes or until the chicken is cooked through.
4.Remove the chicken pieces from the pot and set them aside to cool.
5.Add the rice to the pot and bring the mixture back to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes or until the rice is cooked through.
6.Shred the chicken meat and add it back to the pot, stirring to combine. Serve hot.
