1 thick celery rib , chopped

10 ounces cod or 10 ounces white fish fillets , cut into bite size pieces
3 ounces bean sprouts
1 teaspoon finely chopped red chile
sweet basil or fresh coriander leaves

Instructions

1.In a bowl, combine tamarind paste or lime juice, water or fish stock and palm sugar or white sugar. Mix well and set aside.

3.Add the fish fillets and bean sprouts. Simmer for 3-5 minutes or until the fish is cooked through.
4.Remove from heat and sprinkle the chopped red chile and sweet basil or fresh coriander leaves. Serve hot with rice or noodles.
