Ingredients

1/2 liter milk
2 whole eggs , plus
2 egg yolks , beaten
1/2 vanilla beans or 1/2 teaspoon vanilla extract
3 -4 tablespoons rum
1 cup plain flour
1 cup light brown sugar
2 tablespoons butter
butter , for greasing
sugar , for sprinkling
Canelés De Bordeaux, also known as cannelés or canneles, are a traditional pastry from the Bordeaux region in France. Their unique shape and flavor come from the use of special copper molds coated with beeswax and butter. The outside of the cake is crispy and caramelized, while the inside is soft and custardy, flavored with rum and vanilla. Canelés are typically enjoyed as a dessert or afternoon tea snack and are often served with coffee or hot chocolate. It is said that the recipe for canelés dates back to the 18th century, when nuns in the Bordeaux region used leftover egg yolks from the wine-making process to create a new pastry.

Instructions

1.In a saucepan, heat the milk with the vanilla bean over low heat until warm, then remove from heat and add rum.
2.In a separate bowl, whisk together the flour and sugar, then slowly add the eggs and egg yolks and stir until well combined.
3.Gradually add the milk mixture to the flour mixture, whisking continuously to prevent lumps.
4.Strain the mixture through a fine-mesh sieve into a clean bowl, then stir in the melted butter.
5.Cover the bowl and refrigerate for several hours, or overnight.
6.Preheat the oven to 480°F (250°C).
7.Grease the canelé molds with butter, then sprinkle them with sugar.
8.Fill each mold with the chilled batter to about 3/4 full.
9.Bake for 15 minutes, then reduce the oven temperature to 390°F (200°C) and bake for a further 50–55 minutes, or until the canelés are golden brown.
10.Remove from the oven and let cool for several minutes before removing the cakes from the molds.
