Ingredients

250 g kumquats
1 teaspoon salt
500 g sugar
300 ml water
7 eggs
500 ml milk
500 ml cream
100 g butter
1 loaf white bread

Instructions

1.Preheat the oven to 180°C and grease baking dish with butter.
2.To create the candied kumquats, quarter them and remove the seeds.
3.In a saucepan, combine the sugar, water, and salt over medium-high heat. Bring to a boil.
4.Add the kumquat quarters and reduce the heat to low. Simmer for 15-20 minutes until the kumquats are translucent and tender.
5.Remove saucepan from heat and let the kumquats cool.
6.In a separate bowl, whisk the eggs.
7.Whisk in the milk, cream, and a pinch of salt.
8.Melt the butter and brush both sides of each bread slice liberally with it.
9.Cut the buttered bread into triangles or cubes and arrange them in the baking dish.
10.Pour the egg mixture over the bread.
11.Arrange the candied kumquat quarters on top of the bread.
12.Bake in the preheated oven for 45 minutes until the pudding is golden brown and puffy.
13.Serve the bread and butter pudding with the kumquat syrup from the saucepan and a dollop of whipped cream or ice cream. Enjoy!
