Ingredients

2 cloves garlic , minced
1 can tomato sauce
5 cups water
1/2 teaspoon salt
1 bay leaf
2 carrots , thinly sliced
1/4 head cabbage , thinly sliced
1 teaspoon garlic powder
1 1/2 lbs firm white fish fillets , cut into pieces ( I usually use sea bass or orange roughy )
2 tablespoons chopped parsley ( optional )

Instructions

1.In a large pot, heat the olive oil over medium-high heat.
2.Add the onions and garlic and cook until they are softened and lightly browned.
3.Add the tomato sauce, water, salt, bay leaf, carrots, cabbage, and garlic powder to the pot. Bring to a boil and then reduce the heat to low and let simmer for 20 minutes.
4.Add the fish to the pot and let cook for an additional 5-10 minutes until the fish is fully cooked.
5.Remove the bay leaf and discard.
6.Serve hot with chopped parsley, if desired.
