Ingredients

2 packages fresh spinach
1 teaspoon lemon juice
1 pinch nutmeg
1 salmon fillets
8 sheets phyllo pastry
1/3 cup butter , melted
2 teaspoons butter
1 onion , chopped
3/4 cup sliced mushrooms
3/4 cup vegetable stock
2/3 cup water
1/4 teaspoon salt
1 pinch pepper
1/4 cup wild rice , rinsed
1/3 cup long grain rice
1/4 cup white wine vinegar
1/4 cup white wine
2 tablespoons finely minced shallots or 2 tablespoons onions
1/4 teaspoon salt and pepper
2/3 cup unsalted butter , cut in 1/2 inch cubes
1 tablespoon chopped fresh parsley

Instructions

1.Preheat the oven to 375 degrees Fahrenheit.
2.Steam spinach in a covered pot for about 3 minutes until wilted.
3.Squeeze out the excess liquid from the spinach.
4.Season salmon fillets with salt, pepper and nutmeg.
5.In a pan, sauté onions and mushrooms on medium heat for about 5-7 minutes until tender.
6.Add vegetable stock and water and bring to a boil.
7.Stir in the wild rice and long grain rice, white wine, white wine vinegar and shallots.
8.Reduce heat to low and let the mixture simmer for about 20-25 minutes.
9.Cut the phyllo pastry sheets in half and layer them to create 8 sheets.
10.Brush the phyllo pastry with melted butter.
11.Add spinach and salmon fillets on top of the pastry.
12.Spread the rice mixture over the salmon fillets.
13.Top with fresh parsley.
14.Roll up the pastry and tuck in the edges.
15.Brush with the remaining melted butter.
16.Bake for 30-35 minutes or until golden brown.
