Instructions

1.Rinse oysters, strain the oyster liquor and set aside both.
2.Melt butter in a large saucepan over medium heat. Add onion, celery, and carrot. Cook until onions are transparent.
3.Add flour to the saucepan, whisk constantly for 6 to 8 minutes until mixture is golden brown. Slowly add oyster liquor, chicken broth, and bay leaves while whisking continuously. Continue cooking while whisking for another 3-4 minutes.
4.Add cream and cook over low heat while stirring frequently until bisque is hot but not boiling, about 15 minutes.
5.In another saucepan, bring the oysters and white wine to a simmer over medium heat for about 3-4 minutes.
6.Add oyster and wine mixture to the bisque and cook for another minute. Add salt and sherry and stir well. Serve hot with fresh parsley garnish.
