Instructions

.Preheat oven to 350°F (180°C). Grease two 8-in (20-cm) round cake pans and line with parchment paper. Grease again.
.In a large bowl, cream the butter and brown sugar until light and fluffy.
.Gradually mix in the beaten eggs. Be sure to scrape the bowl frequently.
.Sift together the flour and baking powder. Add the dry ingredients to the wet ingredients while mixing continuously.
.Pour in the milk, maple syrup, and chopped walnuts. Mix well.
.Pour the cake batter evenly into the prepared cake pans.
.Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
.Remove from the oven and let cool completely on a wire rack before frosting.
.To make the fudge frosting, melt 3 ounces of butter in a saucepan over low heat.
.Once the butter is melted, add the brown sugar and coffee. Stir continuously until the sugar dissolves.
.Remove the saucepan from the heat and add the maple syrup, milk, maple extract, and icing sugar. Whisk until smooth and silky.
.Once the cakes have cooled, spread a generous layer of frosting on top of one cake. Sprinkle with chopped walnuts, if desired. Place the second cake layer on top and continue to frost the top and sides of the cake with the remaining frosting.
.Decorate the top of the cake with walnut halves.
.Serve and enjoy!
