1 cup pure maple syrup , I use the Amber
3 egg yolks
2 cups light cream
3/4 cup walnuts , coarsely chopped
1 tablespoon maple liqueur or 1 tablespoon maple extract

Instructions

1.Heat maple syrup in a saucepan over medium heat until reduced to 1/2 cup, around 10 minutes.
2.Whisk egg yolks in a bowl.
3.Add the reduced maple syrup to the egg yolks and whisk until well combined.
4.Heat light cream in a medium saucepan over medium heat until bubbles start to appear around the edge of the pot.
5.Gradually add the egg and maple syrup mixture to the saucepan in a stream, whisking constantly until fully combined.
6.Cook the mixture over low heat, stirring constantly with a wooden spoon until the mixture coats the back of the spoon, around 5 minutes.
7.Remove from heat and let it cool.
8.Add walnuts and maple liqueur or extract to the ice cream mixture and stir until well combined.
9.Transfer to a container and place in the freezer until frozen solid, around 3 hours.
