Canadian Cheddar Rarebit is a variation on the classic Welsh Rarebit recipe, which dates back to the 1700's. It is a popular breakfast or lunch dish in Canada, consisting of cheese mixed with beer or milk, and then heated and served over toast. In this recipe, sharp Canadian cheddar cheese is used, along with other tasty ingredients like Dijon mustard, Worcestershire sauce, and cayenne pepper. The addition of poached eggs on top make this dish a perfect brunch meal packed with protein and flavor.

Instructions

.In a medium-sized saucepan, heat the beer/milk over low heat until it is warm.
.Gradually whisk in the shredded cheddar cheese until it has completely melted.
.Remove the saucepan from the heat and stir in the lightly beaten eggs, Dijon mustard, salt, pepper, and Worcestershire sauce. Stir until well combined.
.Place the slices of toasted bread on a baking sheet, and divide the cheese mixture evenly among the slices, spreading it over the tops.
.In a separate saucepan, bring 2-3 inches of water to a simmer over medium heat. Add the white vinegar to the water and stir.
.Crack the eggs, one at a time, into a small dish. Then, use a slotted spoon to gently lower the eggs into the simmering water, one at a time. Poach the eggs for 3-4 minutes, or until the whites have set and the yolks are still runny.
.Using the same slotted spoon, remove the poached eggs from the water and let them drain on a paper towel.
.Place one poached egg on top of each toast and cheese slice.
.Sprinkle each slice with cayenne pepper before serving.
