1 large ripe papaya
1 lemon , juice of
900 g sugar

Instructions

1.Peel, seed and dice ripe papaya
2.In a saucepan, combine diced papaya and sugar and heat on low heat, stirring gently until sugar dissolves
3.Increase heat to medium and cook the mixture, stirring occasionally for about 10 minutes
4.Remove from heat and stir in lemon juice
5.Let the mixture rest for 5 minutes before transferring the jam to sterilized jars
