Ingredients

180 g frozen puff pastry , thawed
250 g camembert cheese ( round )
520 g rhubarb , tinned
6 tablespoons cranberry sauce
1 free-range egg
flour , for dusting

Instructions

1.Preheat your oven to 200C.
2.Dust your work surface and rolling pin with flour and roll the puff pastry out onto it.
3.Cut the pastry into two squares of equal size and place the camembert cheese onto one of the squares.
4.Top the cheese with the tinned rhubarb.
5.Brush the edges of the pastry base with a beaten egg.
6.Place the other puff pastry square on top of the cheese and rhubarb and press the edges together edges to seal the parcel, using a fork to crimp the edges together.
7.Brush the top of the parcel with the beaten egg.
8.Place on a baking sheet and cook for 20-25 minutes, until golden-brown and the cheese has melted.
9.While the parcel is cooking, make the cranberry coulis in a small pan, heat the cranberry sauce and some water over low heat, stirring until the sauce has thickened. Taste and adjust the sweetness, if needed.
10.Cut the pastry in half and serve hot with a generous drizzle of the cranberry coulis.
