Ingredients

6 cups water
36 unpeeled medium shrimp ( about 1 pound )
4 ounces uncooked rice noodles
12 sheets rice paper
1/4 cup hoisin sauce
3 cups shredded red leaf lettuce
1/4 cup thinly sliced fresh basil
1/4 cup thinly sliced of fresh mint
1/3 cup low sodium soy sauce
1/4 cup water
2 tablespoons sugar
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 teaspoon minced peeled fresh ginger
1 teaspoon chili paste with garlic
1 garlic clove , minced

Instructions

1.Bring water to a boil in a large pot over high heat.
2.Add shrimp to pot and cook until pink and firm, about 2 minutes.
3.Remove shrimp from pot with a slotted spoon and set aside.
4.Add rice noodles to pot and cook until tender, about 3 minutes.
5.Drain and rinse under cold water until noodles are cool.
6.Fill a large bowl with warm water.
7.Dip a sheet of rice paper in warm water for a few seconds, making sure it is fully immersed.
8.Place rice paper on a clean, damp kitchen towel and let it soften for about 1 minute.
9.Spread 1 teaspoon of hoisin sauce on the bottom third of rice paper.
10.Add 3 cooked shrimp, 1/4 cup of lettuce, a few pieces of basil and mint, and a small handful of rice noodles on top of hoisin sauce.
11.Roll up rice paper, tucking in the sides as you go, to form a tight cylinder.
12.Repeat with remaining ingredients to make 12 rolls.
13.In a small bowl, whisk together soy sauce, water, sugar, cilantro, lime juice, ginger, chili paste, and garlic.
14.Serve the rolls with dipping sauce on the side.
