Ingredients

1 lb beef , preferably tri-tip
1/4 cup lemongrass , chopped
1 tablespoon lime zest , grated
1 head garlic , peeled
1 teaspoon turmeric
1 piece galangal , about 1 1/2-inches long , chopped
1/2 cup vegetable oil , divided use
5 tablespoons oyster sauce
3 tablespoons sugar
1 1/2 tablespoons paprika
1 kiwi
8 bamboo skewers , soaked in water for 15 minutes
Sach Ang is a traditional Cambodian grilled beef skewer dish that dates back to the Khmer empire. It is a popular street food often served with Khmer style sweet and sour dip, pickles and fresh herbs. Sach Ang is a versatile and delicious dish that can be flavored with a variety of different ingredients, and can be cooked on a barbeque or in a conventional oven. Sach Ang is a real crowd-pleaser, and is ideal for any occasion.

Instructions

1.Cut the beef into thin slices. In a food processor, combine the lemongrass, lime zest, garlic, turmeric and galangal and blend until it becomes a paste.
2.In a large bowl, mix together the beef and the lemongrass paste until well combined.
3.Stir in 1/4 cup of vegetable oil, oyster sauce, sugar, paprika, and the flesh of the kiwi, and mix well.
4.Cover the bowl and marinate in the refrigerator for 1-2 hours.
5.Once the beef has marinated, arrange the slices onto bamboo skewers.
6.Preheat your grill or oven and lightly oil the grates. Grill or bake the skewers for 2-3 minutes on each side, or until they are cooked to your desired level of doneness.
7.Serve the beef sticks with your favorite hot sauce, side of steamed rice, and stir-fried veggies.
