Instructions

1.Preheat oven to 350°F.
2.In a small bowl, combine coconut, brown sugar, cinnamon, and flour.
3.Grease a 9-inch cake pan.
4.In a mixing bowl, cream butter, brown sugar, and white sugar until fluffy.
5.Add in eggs one at a time and mix well between each addition.
6.Add in sour cream and mashed plantains and mix.
7.Sift together flour, baking powder, baking soda, salt, and ginger. Slowly mix the dry ingredients into the wet ingredients until just combined.
8.Pour batter into prepared pan. Sprinkle the top of the batter with the coconut mixture.
9.Bake the cake for 45-50 minutes until golden brown.
10.As soon as the cake comes out of the oven, heat butter, brown sugar, lime juice, and rum in a small saucepan, stirring until sugar dissolves.
11.Quickly poke several holes in the cake and pour the glaze over it.
12.Let cake cool before dusting with confectioners' sugar.
