1 1/8 ounces walnuts
1 3/4 ounces icing sugar
1 egg white , room temperature
1 teaspoon meringue powder
2 tablespoons sugar
1 pinch salt
1 teaspoon pure vanilla extract

1/4 cup coconut oil
1/2 cup icing sugar
2 tablespoons limoncello
1 teaspoon lemon extract
1 lemon , zest of
1 dash yellow food coloring ( optional )
California Walnut Meringues with Limoncello Buttercream is a dessert recipe that's perfect for any occasion. Instructions

1.Preheat oven to 300 degrees F (150 degrees C). In a food processor, pulse the walnuts and icing sugar until finely ground.
2.In a large, clean bowl, beat the egg white until foamy using an electric mixer. Add the meringue powder, sugar, salt and vanilla extract gradually and beat on high until stiff peaks form.
3.Fold in green food coloring and ground walnut mixture.
4.Spoon meringue batter into a piping bag and pipe onto a baking sheet lined with parchment paper.
5.Bake for 20-25 minutes until dry. Remove from oven and cool completely.
6.For the buttercream, beat the coconut oil and icing sugar until smooth. Add limoncello, lemon extract, lemon zest and yellow food coloring. Beat until combined.
7.Match the meringue shells by size and sandwich them together using a dollop of buttercream in between.
