Ingredients

2 lbs ground beef
8 medium size flour tortillas
2 cups mexican cheese ( If 4 blend is not available , mild cheddar will work )
1 can Old El Paso green chilies ( or other brand )
1 bunch green onion
1/2 onion
1 garlic clove ( Minced )
1 teaspoon oregano
1 can of hunt 's chopped tomatoes , sour cream and shredded lettuce ( optional for topping )
3 cans enchilada sauce ( Old El Paso Recommended )
California Style Enchiladas are a hearty and delicious Mexican dish that is perfect for a quick and easy weeknight dinner. The dish features seasoned ground beef wrapped in flour tortillas and topped with enchilada sauce and melted cheese. Instructions

1.Preheat the oven to 350°F.
2.Heat a large skillet over medium heat. Add ground beef, garlic, diced onions, oregano and cook until the beef is browned.
3.Add the green chilies to the skillet and stir for a minute.
4.Add one can of enchilada sauce to the beef mixture and stir to combine.
5.Pour the remaining two cans of enchilada sauce into a bowl.
6.Dip each flour tortilla into the enchilada sauce and lay on a flat surface.
7.Spoon the beef mixture onto the center of each tortilla. Roll the tortilla up and place seam side down in a 9x13 baking dish.
8.Pour the remaining enchilada sauce over the top of the tortillas.
9.Sprinkle the Mexican cheese and green onions over the top of the enchiladas.
10.Bake for 20 to 25 minutes or until the cheese is melted and bubbly.
11.Serve hot with optional toppings of sour cream, shredded lettuce, and tomatoes.
