Ingredients

1/2 - 1 1/2 cup chicken stock or 1/2-1 1/2 cup vegetable stock
2 tablespoons cornstarch
3/4 cup soy sauce
1/2 cup dry sherry
3 tablespoons red chili paste with garlic
1/4 cup sugar
2 tablespoons red wine vinegar
2 tablespoons toasted sesame oil
2 egg whites
2 tablespoons cornstarch
1/2 teaspoon salt
1 lb spaghetti
1/2 cup olive oil , plus
2 tablespoons olive oil
1 lb boneless skinless chicken breast , cut in 3/4-inch cubes
10 -15 whole chinese dried red chili peppers ( do n't eat these , they are for color and heat )
1 cup unsalted dry roasted peanuts
1/4 cup minced garlic
3 cups coarsely-chopped scallions , greens and whites

Instructions

1.In a small bowl, combine chicken/vegetable stock and cornstarch, set aside.
2.In another bowl, mix together soy sauce, sherry, red chili paste, sugar, red wine vinegar, and toasted sesame oil, set aside.
3.Whisk the egg whites, cornstarch, and salt together in a medium bowl.
4.Cook spaghetti according to package instructions until al dente and set aside.
5.In a wok or large skillet, heat the olive oil over high heat. Add the chicken and cook until browned on all sides, then remove from the pan.
6.Add the chilis, peanuts, and garlic to the same pan and cook for 20-30 seconds. Add the sauce mixture, stirring constantly and cook until it thickens, about 2-3 minutes.
7.Stir in the chicken, scallions, and chicken/vegetable stock mixture, and cook until heated through and the sauce has thickened again, about 1-2 minutes.
8.Serve the kung pao chicken mixture over spaghetti, garnish with additional peanuts and scallions if desired.
