Ingredients

4 tablespoons olive oil , divided
1 onion , minced
1 clove garlic , minced
6 potatoes , peeled and thinly sliced
2 quarts cold water
6 ounces linguica sausage , thinly sliced
2 1/2 teaspoons salt
ground black pepper to taste
1 pound kale , rinsed and julienned
Caldo Verde is a traditional Portuguese soup that is hearty, comforting, and filled with bold flavors. The star of the dish is the kale, which adds a pleasantly bitter taste and chewy texture. Instructions

1.Heat 2 tablespoons olive oil in a large pot over medium heat.
2.Add onion and garlic and sauté until softened.
3.Add potatoes and water to the pot.
4.Bring to a boil, then reduce heat and let simmer for about 20 minutes until the potatoes are tender.
5.While the potatoes are simmering, fry the sliced sausage in a pan until browned.
6.Remove sausage from the pan and set aside.
7.Add the remaining olive oil to the pan and sauté the kale until wilted.
8.Puree the cooked potatoes and water in a blender until smooth. Return to the pot and add salt and pepper to taste.
9.Add the cooked sausage and kale to the pot and stir to combine.
10.Serve hot with crusty bread.
