2 ears corn
1 large chayote ( peeled and sliced in long slivers )

1/2 head cabbage ( chopped in thirds with the heart attached to keep the leaves together )
2 large red potatoes ( peeled and quartered )
1/4 bunch cilantro
6 garlic cloves ( peeled )
2 roma tomatoes ( cut in quarters )
1/4 white onion
1 stalk celery
5 beef bouillon cubes
1 teaspoon celery salt
1 teaspoon salt

Instructions

1.In a large pot, put the beef shank and cover it with water.
2.Add bouillon cubes, 1 teaspoon celery salt, and 1 teaspoon of salt.

4.Add corn, chayote, zucchini, carrots, green beans, potato, cilantro, garlic, onion, roma tomato, and celery to the pot.
5.Cover the pot with a lid and let the stew cook for another 20 minutes over medium heat.
6.Add the cabbage and let it cook for another 10-15 minutes until the vegetables are tender.
7.Adjust the seasoning and serve hot.
