1 1/2 lbs squid , cleaned
3 garlic cloves , minced
2 tablespoons minced parsley
2 tablespoons minced celery
2 tablespoons minced onions
1/2 cup breadcrumbs , see notes
4 tablespoons virgin olive oil , divided

Instructions

1.Preheat your oven to 400F.
2.Rinse the cleaned squid and pat them dry with paper towels.
3.In a bowl combine garlic, parsley, celery, onion, breadcrumbs, 2 tablespoons olive oil, salt, and pepper to taste and mix everything together. Reserve some oil and breadcrumbs.
4.Stuff the squid loosely with the mixture, not overpacking them, and seal the opening with a toothpick.
5.In a small baking dish brush reserved olive oil and sprinkle reserved breadcrumbs, add the stuffed squid, and drizzle with remaining 2 tablespoons olive oil. Bake for 25 to 30 minutes until golden brown.
