Ingredients

1 pint strong tea
200 g chewy banana chips
125 g cranberries or 125 g raisins
200 g dates
160 g demerara sugar
125 g chopped walnuts
1 large egg
2 tablespoons milk
450 g self raising flour

Instructions

1.Preheat oven to 180 degrees Celsius, and grease and dust a 9-inch cake tin with flour.
2.Brew a pint of strong black tea and pour it into a large mixing bowl. Add in the banana chips, dried cranberries or raisins, dates, and demerara sugar, stir, and allow to soak for 30 minutes.
3.Beat together the egg and milk, then stir into the soaked fruit mixture.
4.Sift in the flour and add in the chopped walnuts. Mix everything well until thoroughly combined.
5.Pour the mixture into the prepared cake tin and bake for 50-60 minutes until a skewer inserted into the center comes out clean.
6.Remove from the oven and allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
