4 metal skewers
4 tablespoons butter
1/4 cup chopped scallion

1 cup jasmine rice
1 teaspoon fresh lemon juice
1 teaspoon fresh lime juice
2 cups vegetable broth
salt and pepper
1 cup coconut milk
2/3 cup coconut flakes
mango peach salsa ( to garnish ) ( optional )
