Ingredients

2 slices rye bread
2 slices prosciutto
1/4 cup skim-milk natural yogurt
1 tablespoon lemon juice
1 anchovy fillet , well drained and chopped finely
1 teaspoon Dijon mustard
2 baby cos lettuce , trimmed with leaves separated
1 egg , hard-boiled and sliced thinly

Instructions

1.Preheat the oven to 180C.
2.Tear the bread into small pieces and put on an oven tray.
3.Cook for about 10-15 minutes or until the bread is crisp.
4.Cut the prosciutto into thin strips and add to the tray of bread.
5.Cook for a further 5 minutes.
6.To make the dressing, whisk together the yogurt, lemon juice, anchovy and Dijon mustard.
7.Add a little water to thin, if necessary.
8.Place the cos lettuce leaves in a bowl. Drizzle with the dressing. Top with the croutons, prosciutto and egg slices.
9.Serve immediately.
