Ingredients

12 large savoy cabbage leaves
cooking spray
3 teaspoons olive oil , divided
3 small leeks , halved , white and light green parts cut into 1/2 inch thick pieces
1/4 - 1/2 cup vegetable broth
3 slices lemons
2 garlic cloves , minced
1 can chopped tomatoes
3 tablespoons fresh parsley , chopped
8 ounces low fat cottage cheese , drained ( or ricotta cheese )
3 tablespoons toasted pine nuts
Cabbage casserole with leeks and pine nuts is a perfect vegetarian dish for those who are looking for healthy and flavorful food options. Instructions

1.Preheat the oven to 375°F.
2.Bring a large pot of salted water to a boil. Add the cabbage leaves and cook for 2-3 minutes, or until tender. Drain and rinse with cold water.
3.Coat a 9x9 inch baking dish with cooking spray.
4.Heat 2 teaspoons of olive oil in a large skillet over medium heat. Add the leeks and cook for 2-3 minutes, or until they begin to soften. Add ¼ cup vegetable broth, the lemon slices, and garlic. Cook for 2-3 minutes, or until the broth has evaporated.
5.Add the chopped tomatoes and parsley to the skillet. Stir well and cook for 2-3 minutes, or until the liquid has reduced slightly.
6.In a separate bowl, mix the cottage cheese and remaining teaspoon of olive oil together.
7.Place one cabbage leaf in the bottom of the baking dish. Spoon some of the tomato mixture on top of the leaf, then place another cabbage leaf on top. Repeat these layers until all the cabbage leaves and tomato mixture have been used, ending with a layer of tomato mixture on top of the final cabbage leaf.
8.Spoon the cottage cheese mixture over the top of the casserole. Sprinkle with the toasted pine nuts.
9.Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the pine nuts are toasted.
10.Let the casserole cool for 5-10 minutes before serving.
