Ingredients

1/2 cup dried white kidney beans , soaked overnight ( see note )
1 cup wild rice ( I used red )
1 yellow onion , sliced
3 garlic cloves , minced
1 small cabbage , quartered and sliced
5 small carrots , julienned
5 small red potatoes , julienned
2 celery ribs , diced
1 red bell pepper , julienned
8 -10 cups vegetable broth , divided
4 tablespoons fresh parsley , chopped
2 tablespoons dried thyme
3 tablespoons steak spice
1 bay leaf
2 italian tofu sausages ( optional )
Cabbage (And Other Good Stuff) Soup is a versatile and nutritious dish that is perfect for a cold day. Instructions

1.Drain and rinse the soaked kidney beans. Set them aside.
2.In a large soup pot, sauté the onion and garlic in olive oil over medium-high heat for about 5 minutes until translucent.
3.Add the cabbage, carrots, potatoes, celery, and red bell pepper and sauté for a few minutes until tender.
4.Add the broth, bay leaf, thyme, and steak spice to the pot and bring to a boil.
5.Reduce the heat to low and add in the wild rice, kidney beans, and tofu sausages (if using).
6.Cover the pot and let simmer for about 45 minutes, or until the beans and rice are tender.
7.Remove the bay leaf and stir in the chopped parsley.
8.Serve hot and enjoy!
