Ingredients

1 tablespoon vegetable oil ( I used peanut oil )
2 garlic cloves , minced
1 medium tomatoes , peeled , seeded and diced
2 small red chilies , minced
2 tablespoons sugar
2 tablespoons fish sauce ( nuoc mam )
2 tablespoons water
2 tablespoons cilantro , chopped
2 tablespoons scallions , chopped
1 red snapper , cleaned , scaled
Ca Chien, or Crispy Red Snapper With Spicy Tomato Sauce, is a classic Vietnamese dish that has become popular all over the world. The fish is first deep-fried until golden brown and crispy, then served with a sweet and sour tomato sauce that is spiked with chopped chilies, garlic, cilantro, and scallions. This dish is often served with rice, vegetables, or coconut milk to temper the heat of the sauce.

Instructions

1.In a saucepan, heat the vegetable oil over low heat and add the minced garlic.
2.Stir in the diced tomatoes, red chilies, sugar, fish sauce, and water. Simmer for 10-15 minutes until the sauce thickens.
3.Add the cilantro and scallions and stir well.
4.In a deep-fryer or large pot, heat oil over medium-high heat to 365 degrees F (185 degrees C).
5.Rinse the red snapper and pat dry with paper towels.
6.Score the skin several times and rub some salt all over the fish.
7.Deep-fry the fish until golden brown and crispy, about 10-12 minutes.
8.Serve the Crispy Red Snapper with the spicy tomato sauce.
