Ingredients

385 g butternut squash , cut into wedges and then large cubes
4 garlic cloves , unpeeled
10 sprigs thyme
1 tablespoon olive oil
17 g diced pancetta
50 ml double cream
1 egg
1 egg yolk
20 g parmigiano-reggiano cheese , grated ( Parmesan )
300 g spaghetti
Butternut Squash Carbonara is a twist on the classic Carbonara pasta, replacing the traditional pork fat with sweet and creamy butternut squash. The result is a lighter and healthier pasta dish that is perfect for autumn and winter months. This recipe takes inspiration from both Italian and British cuisines, making it a comfort food that combines the best of both worlds. The pancetta adds some salty flavor, the Parmesan cheese gives a nutty and sharp taste, and the thyme and garlic round up the flavors perfectly.

Instructions

1.Preheat the oven to 220C/200C Fan/Gas 7.
2.Place the butternut squash, garlic and thyme on a baking tray.
3.Drizzle with olive oil and stir to coat. Season with salt and pepper.
4.Roast for 25 minutes or until the squash is tender.
5.Meanwhile, cook the spaghetti in a large pan of boiling salted water until al dente.
6.Drain, reserving 100ml of the cooking water.
7.In a frying pan, cook the pancetta until crisp and golden.
8.In a bowl, beat together the egg, egg yolk, cream and Parmesan until smooth.
9.Pour the egg mixture into the frying pan, stirring constantly over a low heat for 1 minute until smooth and creamy.
10.Add the squash and spaghetti to the frying pan and toss to combine, adding reserved cooking water as necessary to loosen the sauce.
11.Serve and sprinkle with more Parmesan cheese, if desired.
