Ingredients

1 large butternut squash , about 3 pounds , halved , seeds removed
2 tablespoons vegetable oil
1/2 teaspoon salt

1/2 lb sweet Italian sausage , removed from casings
1 large onion , chopped
6 garlic cloves , minced
1 tablespoon chopped fresh sage , plus
12 whole sage leaves
1 teaspoon chopped fresh marjoram
6 cups low-fat chicken broth or 6 cups broth
1 teaspoon cider vinegar or 1 teaspoon lemon juice
1/2 cup heavy cream ( or more )
2 tablespoons butter

Instructions

1.Preheat the oven to 375°F.
2.Brush the cut sides of the butternut squash with oil and sprinkle with salt and black pepper. Place onto a baking sheet, cut side down.

4.Meanwhile, in a large pot, brown the sausage over medium-high heat and remove from the pot.
5.Add onion and garlic to the same pot and cook for 5-6 minutes, until translucent.
6.Stir in chopped sage and marjoram and cook for another minute.
7.Scoop the roasted butternut squash from the skin and add to the pot.
8.Pour chicken broth to the pot and add sage leaves. Bring to a boil and then reduce heat and simmer for 15-20 minutes.
9.Remove the sage leaves and puree the soup until smooth with an immersion blender or stand blender.
10.Add cider vinegar or lemon juice, cream and butter to the soup. Cook over low heat until heated through.
11.Serve with your choice of toppings and enjoy!
