Ingredients

1 cup hazelnuts
1 1/2 kg butternut pumpkin , cut into 3cm pieces
olive oil flavored cooking spray
salt and pepper
175 g marinated persian feta cheese , drained
1/4 cup honey
2 tablespoons balsamic vinegar
1 tablespoon olive oil
salt and pepper , to taste
Butternut pumpkin (Squash), roasted hazelnut and feta salad is a delicious and healthy way to include butternut squash in your diet. Instructions

1.Preheat oven to 180°C.
2.Spread hazelnuts onto a baking tray. Roast hazelnuts in the preheated oven for approximately 5-10 minutes, set aside to cool.
3.Line two baking trays with baking paper. Place butternut pumpkin pieces onto lined trays. Lightly spray with cooking oil then season with salt and pepper. Roast in the preheated oven for approximately 15-20min, or until cooked through.
4.To make the dressing, whisk together honey, balsamic vinegar, olive oil and salt and pepper in a small bowl.
5.Arrange the roasted pumpkin pieces onto a serving platter. Sprinkle roasted hazelnuts and crumbled Persian feta on top. Drizzle the salad dressing over the top. Serve and enjoy!
