Ingredients

butter , for greasing
4 pecan halves
5 bay leaves
85 g butter
1 tablespoon olive oil
2 onions , chopped
1 teaspoon ground coriander
50 g pecans , chopped
100 g fresh white breadcrumbs
140 g pork sausage ( or skinned sausages )
75 g ready-to-eat dried apricots
25 g dried cranberries or 25 g craisins
1 small orange , finely grated zest only
4 -6 sage leaves , finely chopped
1 large egg , beaten
Buttered pecan, cranberry and apricot sausage stuffing loaf is a savoury dish that can be served as a side dish or enjoyed as a main. The pecans and cranberries lend a subtle sweetness to the bold flavours of the sausage and coriander. The loaf shape makes it easy to slice and serve, and the bay leaves add a touch of elegance to the presentation. This is a great dish to serve during the holiday season or any family gathering.

Instructions

1.Preheat the oven to 180 C or gas mark 4.
2.Grease a 600g loaf tin with butter. Lay the bay leaves in the base of the tin.
3.Melt the butter and olive oil in a large frying pan. Add the onions and fry gently for 8 minutes until softened.
4.Stir in the coriander and pecans, fry for 1 minute.
5.Remove from heat and stir in the sausage meat, apricots, cranberries, orange zest, sage and breadcrumbs. Season.
6.Add the beaten egg, and mix.
7.Spoon the stuffing mixture into the loaf tin and press it down firmly.
8.Bake for 25-30 minutes or until golden brown and the stuffing is cooked through.
9.Leave to cool in the tin for 10 minutes before turning out and slicing.
