Ingredients

1/2 fresh yeast cake , softened in
1/4 cup water
1/2 cup mashed potatoes
1 cup sugar
1/2 cup butter , melted ( no substitutions )
2 cups milk , room temperature
2 eggs , well beaten
1/2 teaspoon salt
6 cups flour , sifted ( quantity approximate )
2 tablespoons butter , melted
1/4 cup confectioners ' sugar
Moravian Butter Rolls are a popular pastry in Slovakia and the Czech Republic. Instructions

1.In a large bowl, dissolve yeast in water.
2.Add the mashed potatoes, sugar, melted butter, milk, eggs, salt, and mix until smooth.
3.Stir in enough flour to form a soft dough.
4.Turn the dough onto a floured surface and knead until smooth and elastic, about 6-8 minutes.
5.Place in a greased bowl and turn to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
6.Punch the dough down and shape into 24 balls. Place them, 2 inches apart, on greased baking sheets.
7.Cover and let rise until doubled, about 40 minutes.
8.Preheat oven to 375°F. Brush rolls with melted butter.
9.Bake until golden brown, about 20 minutes. Cool on wire racks and dust with confectioners' sugar before serving.
