Ingredients

2 tablespoons olive oil
8 ounces chorizo sausage , chopped into small bite-sized pieces
2 red onions , roughly diced
2 garlic cloves , very finely sliced
2 sprigs thyme
2 tins butter beans , drained
1 savoy cabbage , outer leaves removed , core removed , and leaves roughly chopped
1 lemon , grated zest , plus juice of half the lemon
1 ounce parsley , roughly chopped
salt and pepper

Instructions

1.Heat olive oil in a large saucepan over medium-high heat. Add chopped chorizo and stir occasionally for 5-7 minutes until browned.
2.Add diced red onions, sliced garlic and thyme sprigs and cook for a further 5 minutes stirring occasionally.
3.Add the drained butter beans and chopped savoy cabbage to the saucepan and mix well.
4.Add 500ml of water and season the soup with salt and pepper to taste.
5.Stir well and bring to a simmer. Reduce the heat to low and cook for 30 minutes or until the cabbage is tender.
6.Remove the thyme sprigs and add grated lemon zest and lemon juice to the pan. Mix well.
7.Divide the soup into bowls, sprinkle with chopped parsley and serve hot.
