Ingredients

100 g polenta
200 g plain flour
100 g stale breadcrumbs
100 g caster sugar
500 ml milk
3 large eggs , beaten
100 g runny honey
55 ml olive oil
100 g dried figs , chopped up
100 g raisins or 100 g sultanas
500 g firm apples , peeled , cored and roughly diced
1/2 teaspoon ground cinnamon
2 oranges , zest of
2 lemons , zest of
1 teaspoon salt
Bustrengo is a traditional Italian dessert hailing from the Emilia-Romagna region. This delicious cake-like dessert is made with polenta and a variety of dried fruits, sweetened with honey. The use of stale breadcrumbs in the recipe gives the cake a light and fluffy texture, while the diced apples provide a nice balance to the sweetness.

Instructions

1.Preheat your oven to 180°C/gas mark 4/350°F.
2.Grease a 20 cm square baking tin with olive oil.
3.In a large mixing bowl, mix together the polenta, flour, breadcrumbs, caster sugar and salt.
4.In a separate bowl, whisk together the milk, eggs, honey and olive oil.
5.Pour the wet ingredients into the dry mixture, whisking until well combined.
6.Fold in the chopped figs, raisins/sultanas, diced apples, cinnamon, orange zest and lemon zest.
7.Pour the mixture into the greased baking tin and level off the surface.
8.Bake for approximately 55 minutes or until golden brown on top.
