Ingredients

1 lb ground beef or 1 lb turkey
1 can black beans , drained and rinsed
3 ounces tequila
4 tablespoons epazote ( a Mexican spice )
2 ancho chilies , chopped finely ( `` Anaheim '' preferred )
1/2 cup taco seasoning , plus
1 tablespoon taco seasoning
3 tablespoons cocoa powder
1 tablespoon black pepper , freshly ground
1 ounce hot sauce
20 ounces water
8 ounces sour cream
1 can salsa verde ( green salsa )
3 cups sharp cheddar cheese , finely shredded
2 cups Minute Rice
25 flour tortillas ( thick and fresh so they wo n't break when rolled )
Burriquitas, also known as mini burritos, are a delicious Mexican dish that is perfect for feeding a crowd. They are similar to traditional burritos, but are smaller in size and easier to customize. This recipe includes a flavorful beef and bean filling, combined with rice, cheese, and a sour cream-salsa verde topping. Instructions

1.In a large skillet, cook ground beef or turkey over medium heat until browned, stirring to crumble it as it cooks.
2.Drain excess grease from the skillet, then add black beans, tequila, epazote, ancho chilies, taco seasoning, cocoa powder, black pepper, hot sauce, and water. Stir well to combine.
3.Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes, stirring occasionally, until the liquid has thickened.
4.In a separate bowl, combine sour cream and salsa verde, then set aside.
5.Cook Minute Rice according to package instructions, then set aside.
6.Preheat oven to 350°F.
7.Assemble burritos by spooning 1-2 tablespoons of the beef and bean mixture onto each tortilla, then adding 1-2 tablespoons of rice and a sprinkle of shredded cheddar cheese on top. Roll up tightly, then place seam-side down in a greased 9x13 baking dish.
8.Once all burritos are assembled, pour the sour cream-salsa verde mixture over the top, then sprinkle with remaining shredded cheddar cheese.
9.Bake in preheated oven for 10-15 minutes, or until cheese is melted and bubbly.
