1/3 cup caster sugar ( superfine sugar )
3 eggs
1/3 cup honey

Instructions

1.Preheat the oven to 160°C/350°F.

3.Meanwhile, sprinkle the caster sugar evenly over the bottom of a large, shallow, oven-safe dish. Place the dish in the preheated oven and cook for 5-7 minutes, or until the sugar has melted and turned golden brown.
4.Remove the dish from the oven and immediately whisk in the eggs, honey, and warm milk mixture. Strain the mixture through a fine-mesh sieve into a large, heatproof jug.
5.Divide the mixture between 6-8 ramekins and place them in a deep baking dish or roasting tin.
6.Pour boiling water into the dish around the ramekins, until the water reaches halfway up the sides of the dishes.
7.Bake for 30-40 minutes, until the creams are set but still wobbly in the centre.
8.Remove the ramekins from the water bath and leave to cool to room temperature.
9.Chill in the fridge for at least 2 hours, or until cold and set.
