Instructions

1.Preheat the oven to 350°F. Grease and flour two 9-inch round baking pans.
2.In a small saucepan, melt the unsweetened chocolate over low heat, stirring constantly until smooth. Set aside to cool slightly.
3.In a large bowl, cream the softened butter and brown sugar until light and fluffy. Add eggs one at a time, then beat in the vanilla extract.
4.In a separate bowl, sift together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Mix until smooth.
5.Stir in the melted chocolate, then slowly stir in the boiling water until smooth.
6.Divide the cake batter evenly between the two prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the centre of each cake comes out clean. Let cool for 10 minutes before removing from pans.
7.To make the frosting, combine the confectioners' sugar, vanilla extract, heavy cream and cocoa powder in a large bowl and beat until stiff peaks form.
8.Spread the frosting between the cooled cake layers and on top and sides of the cake. Refrigerate for at least an hour before serving.
