8 medium firm ripe pears

Instructions

1.Peel pears leaving stem intact. Cut thin slice from bottom of each pear so it will stand up straight when placed in wine mixture.
2.In a large deep sauce pot, heat orange juice, wine, and cranberry juice until it comes to a boil. Add pears, orange slices, cinnamon sticks, and orange rind if desired, reduce heat to medium and simmer, covered, for about 20 minutes or until pears are easily pierced with fork.
3.Remove pot from heat and let cool to room temperature. Chill thoroughly before serving.
4.Optional: Serve with fresh mint leaves for an added fresh flavor.
