2 hamburger , pattys precooked diced or 1/2 lb meat , minced
2 bell peppers , diced
1 tablespoon soy sauce or 1 tablespoon coconut aminos
2 teaspoons red chili pepper flakes
1 teaspoon chili powder
salt & freshly ground black pepper , to taste
3 tablespoons coconut oil , divided
6 bunches bok choy , washed
1 teaspoon ginger , freshly grated
salt , to taste
2 eggs
This paleo-friendly Burger Stir-Fry recipe is perfect for a busy weeknight when you want something quick, easy, and healthy. The dish is a delicious blend of stir-fried seasoned ground beef, bell peppers, and bok choy, served with scrambled eggs. Instructions

1.In a mixing bowl, combine the diced hamburger patties (or minced meat), diced bell peppers, soy sauce (or coconut aminos), red chili pepper flakes, chili powder, salt, and pepper. Stir well.
2.Heat up 2 tablespoons of coconut oil in a skillet over medium-high heat. Add the seasoned ground beef mixture and stir-fry for about 7-8 minutes or until fully cooked.
3.Meanwhile, take another skillet and heat up 1 tablespoon of coconut oil over medium-high heat. Add the washed and chopped bok choy and grated ginger. Stir-fry until the veggies are tender for about 3-5 minutes. Season with salt to taste and push to the edges of the skillet.
4.Make a well in the center of the second skillet and add 2 whisked eggs. Let it cook without stirring until the bottom begins to set, then scramble the eggs to cook them through.
5.Remove the bok choy mixture from the skillet and serve with the cooked burger mixture and scrambled eggs. Enjoy the Burger Stir-Fry (Paleo)!
