Ingredients

1/4 cup lime juice
1/4 cup fish sauce
1/4 cup water
1 tablespoon rice vinegar
2 tablespoons sugar
1 garlic clove , minced
1 thai chili , finely chopped
shredded carrot ( optional )
1 lb rice vermicelli noodles
1/2 cup sliced garlic , fried
1 1/2 cups fresh mung bean sprouts
2 Persian cucumbers , julienned
1 1/4 cups fresh cilantro leaves
1 1/4 cups fresh mint leaves
1 cup thai basil leaves , roughly chopped
4 scallions , thinly sliced
2 teaspoons ground black pepper
1 cup unsalted dry roasted peanuts , crushed
Bun, also known as Vietnamese Herb Noodle Salad is a flavorful and refreshing dish that is perfect for summertime. Instructions

1.In a bowl mix together lime juice, fish sauce, water, rice vinegar, sugar, minced garlic and finely chopped thai chili until the sugar dissolves.
2.Cook rice vermicelli noodles according to instructions on the package. Rinse under cold water and drain.
3.Toss noodles with 1/2 of the prepared sauce.
4.Serve noodles topped with fried garlic, fresh mung bean sprouts, julienned Persian cucumbers, cilantro leaves, mint leaves, thai basil leaves and thinly sliced scallions. Pour remaining half of the sauce over the salad and sprinkle with ground black pepper and crushed peanuts.
