Ingredients

225 g rice vermicelli
450 450 g flank steaks or 450 g top round beef , cut into strips
1 onion , peeled and finely chopped
3 garlic cloves , peeled
2 stalks lemongrass , finely chopped
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon curry powder ( optional )
1 tablespoon fish sauce
200 g lettuce , shredded
1 cucumber , peeled and shredded
225 g bean sprouts
40 g fresh mint leaves
40 g coriander , coarsely chopped ( cilantro )
150 g carrots , shredded
100 g crushed roasted peanuts

Instructions

1.Soak the rice vermicelli in boiling water for 3-5 minutes
2.Drain and rinse the vermicelli under cold water, set aside
3.In a blender or food processor, combine 1/2 of the onion, garlic cloves and lemongrass, blend until smooth
4.In a mixing bowl, add the sliced beef, marinade paste, salt, black pepper and curry powder if using, mix well
5.Heat up a grill pan on high heat and grill the beef slices for 2-3 minutes per side, until well done
6.Assemble the salad by placing the lettuce, cucumber, vermicelli, bean sprouts, mint leaves, coriander and carrots in a large bowl or plate
7.Top with the grilled beef slices and sprinkle with crushed roasted peanuts
8.For the dressing, combine fish sauce, 1/2 cup water, sugar, remaining onion, garlic and lemongrass, mix well
9.Drizzle dressing over the salad and toss well
10.Serve immediately and enjoy
