Ingredients

1 cup lentils , washed
6 1/2 cups chicken broth or 6 1/2 cups water
3 tablespoons butter
3 tablespoons olive oil
3 medium onions , peeled halved thinly sliced
2 cups bulgur , coarse grain
salt , to taste
fresh ground black pepper , to taste
1 tablespoon tomato paste
1/4 teaspoon crushed red pepper flakes

Instructions

1.In a large saucepan over high heat, combine the lentils and chicken broth. Bring to a boil, then reduce the heat and simmer, covered, for about 15-20 minutes or until lentils are tender.
2.While the lentils cook, in a large nonstick skillet over medium-high heat, heat the butter and olive oil until hot but not smoking. Add the onions and cook, stirring occasionally, for about 15 minutes or until onion begins to brown.
3.Add the bulgur to the onions and stir to coat with the oil and butter. Add salt, black pepper, tomato paste, and red pepper flakes. Mix well.
4.Add the cooked lentils to the bulgur mixture and mix well. Remove from the heat and let stand for about 5 minutes, covered. Fluff with a fork before serving.
