Ingredients

1 package dry Ranch dressing mix
1 tablespoon canola oil
1 small onion , chopped
1 celery rib , finely chopped
1 large carrot , grated
2 garlic cloves , minced
1 1/2 pounds rotisserie chicken , shredded
1 can diced tomatoes , drained
1 bottle buffalo wing sauce
1/2 cup water
1 1/2 teaspoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 container ricotta cheese
1/2 cup Italian flat leaf parsley , minced
1 egg , lightly beaten
12 ounces part-skim mozzarella cheese , shredded
8 ounces white cheddar cheese , cut into thin slices
7 ounces crumbled bleu cheese , divided

Instructions

1.Preheat the oven to 350°F.
2.In a large skillet over medium heat, heat oil and sauté onion, celery, carrot, and garlic for 8 minutes or until tender.
3.Add the shredded chicken, diced tomatoes, buffalo sauce, water, Italian seasoning, salt, and pepper and mix well. Let it simmer for 15-20 minutes.
4.In a mixing bowl, combine the ricotta cheese, parsley, egg, and 4 ounces of the crumbled blue cheese.
5.To assemble, spread half of the mashed potatoes at the bottom of a 9x13 inch baking dish. After that, spread the chicken mixture on top of the mashed potatoes and add half of the mozzarella cheese and remaining crumbled blue cheese.
6.Spread the remaining potatoes on top of the chicken and cheese mixture. Evenly add the cheddar slices and the remaining mozzarella cheese.
7.Bake for 25-30 minutes or until the cheese is melted and bubbly. Let it cool for 5 minutes and serve.
