Ingredients

4 cups water
1 teaspoon salt
2 cups long grain white rice
4 -6 tablespoons butter ( I replaced 1 tablespoon of butter with good quality olive oil )
1/2 cup pine nuts
1 small whole cinnamon sticks or 1 teaspoon ground cinnamon
fresh ground black pepper

Instructions

1.Rinse the rice in a strainer until the water runs clear. Drain well.
2.Bring the water and salt to a boil in a large saucepan.
3.Add the rice and stir well. Add the cinnamon stick if using. Reduce the heat to low and cover the pan with a tight-fitting lid.
4.Cook for 18-20 minutes until the water has been absorbed and the rice is tender.
5.Remove from heat and let stand with the lid on for 5-10 minutes.
6.In a separate pan, melt the butter (or butter and olive oil mixture) over low heat.
7.Add the pine nuts and cook until golden brown.
8.Add the cooked rice to the pan and stir well. Remove the cinnamon stick if used.
9.Season with freshly ground black pepper.
