Ingredients

1 1/2 cups self-raising flour
3 tablespoons cocoa
1 cup sugar
1 cup water
1 teaspoon vanilla essence
1 tablespoon white vinegar
6 tablespoons vegetable oil ( not olive or other strong flavoured oil )
1/4 teaspoon salt
1/4 cup icing sugar ( optional )
1 cup icing sugar
1 1/2 tablespoons cocoa
1 tablespoon butter
1 -2 tablespoon hot water ( do not be tempted to use extra ! )
Budget Pantry Fudge Cake is the perfect solution for those who want a quick and easy dessert using only basic pantry ingredients. The cake can be made in just over 30 minutes and has a rich chocolate flavour that's sure to satisfy any sweet tooth. Instructions

1.Preheat the oven to 180°C/ 350°F. Grease a 20cm (8 inch) cake tin.
2.In a large bowl, sift together the self-raising flour and cocoa. Add the sugar and salt and mix well.
3.Combine the water, vanilla essence, white vinegar and vegetable oil in a jug.
4.Gradually stir the wet ingredients into the dry ingredients, mixing well to form a smooth batter.
5.Pour the mixture into the prepared cake tin and bake for 30-35 minutes, or until a skewer inserted into the centre of the cake comes out clean.
6.Allow the cake to cool in the tin for 5 minutes, then turn out onto a wire rack and allow to cool completely.
7.To make the icing, combine the icing sugar, cocoa, butter and hot water in a small bowl. Mix well until smooth and spreadable.
8.Once the cake has cooled, spread the icing over the top and serve.
