Instructions

1.Preheat oven to 400°F.
2.Cut the beef tenderloin into 4 equal portions and season with salt and pepper.
3.Heat oil in a large skillet over medium-high heat. Add the beef and sear on all sides until browned, about 2-3 minutes per side. Remove from the skillet and set aside.
4.Reduce the heat to medium and add the onions, mushrooms, and sweet peppers to the skillet. Cook, stirring occasionally, until the vegetables have softened, about 5-7 minutes.
5.Stir in the tomato puree, paprika, and white pepper. Cook for an additional 2-3 minutes until fragrant.
6.Spread the bacon fat on top of each beef tenderloin portion.
